The vineyard

At 600 metres above sea level, in a distinctive landscape touched by a constant breeze, Podere Cavàga’s vineyard follows its own seasonal rhythm. This special microclimate creates ideal grape-growing conditions: in winter, gentle wind protects the vines from frost; in summer, it keeps them cool and dry, supporting slow, balanced ripening. The life of the vine

January

Winter wraps the vineyard in stillness and atmosphere. Snow may appear, but the constant hillside breeze keeps the vines from freezing, protecting them from extreme cold. It is the season of dormancy, while our experts plan the year ahead.

February

This is the month of pruning, a meticulous task that guides each vine into a new growing cycle. Wind flowing between the rows keeps the air fresh and the vines healthy, preparing them for spring’s renewal.

March

Temperatures begin to rise and sap flows through the shoots again, marking the vineyard’s awakening. The first buds appear as sunlight falls on the slopes and slowly warms the earth. It is an ideal time to explore the vineyard and watch life return.

April

As spring arrives, the rows turn green and the hillside vineyard becomes a living picture. Gentle breezes keep the plants dry, protecting them from moisture and disease. Fresh, pure mountain air accompanies each new leaf as it opens.

May

The first vine flowers open, releasing a delicate scent into the pure hillside air. It is a key moment for the coming harvest: wind supports pollination, helping healthy, evenly distributed bunches develop.

June

Grapes begin to form and bunches take shape beneath the high sun. Cool hillside air softens the summer heat, preventing water stress and supporting even ripening. Light reflects on the leaves, creating spectacular views across the vineyard.

July

While heat builds in the plains, our vineyard enjoys a balanced climate. Constant breezes keep the bunches dry and healthy, reducing the risk of disease. The difference between day and night temperatures helps the vines develop complex, refined aromas.

August

It is time for veraison, when the grapes begin to change colour: white grapes turn golden and red grapes take on violet tones. Slow ripening at altitude creates an exceptional concentration of aromas, with berries rich in freshness and structure.

September

The most eagerly awaited month of the year. Harvest begins when each bunch has reached the right balance of sugar and acidity, supported by temperature variation and natural ventilation. Our experts hand-select only the finest grapes, preserving the purity and elegance of the wines to come.

October

With harvest complete, the vineyard takes on its autumn colours and the freshly picked grapes begin their transformation in the winery. October’s cool climate helps preserve the must’s quality, while golden and russet vines create breathtaking views.

November

As nature slows, the wine begins ageing in barrels. The vineyard settles into its autumn rest, while gentle breezes keep the air clear and the vines protected. It is the perfect month to savour the first fruits of the new vintage.

December

The air grows crisp and the vines lose their leaves. Morning frost decorates the rows like a veil of crystal. Nature sleeps, but the winery celebrates the birth of new wines, ready to tell the story of a year lived among the hills.
